Bai Ji Guan (White Rooster Crest) Light Roast Rock Oolong 2007 
The name of this tea comes from the shape of the fresh leaves in the early spring. It is curled and covered with white down resembling a rooster's crest. It is the rarest of the original rock oolongs grown in the central Wu Yi Mountains or Zheng Yan Cha because of the difficulty cultivating it from the original bushes. It is only picked one day of the year to maintain its rich nutrition. Since it grows in the soft rock soil it is high in minerals and highly valued for its healing properties. The dry leaves have a lightly roasted cocoa aroma that comes from 2-3 hours of baking over charcoal at a low temperature in a bamboo basket. The traditional method is always lightly roasted. Once brew you can smell a fresh magnolia fragrance which is very unusual from other rock oolongs. This tea taste starts light and finishes sweet and complex. The color of the finished leaf is very light compared to the darkness of other rock oolongs. The tea has been written about since the Ming dynasty. The smell and taste have made this tea a favorite with China's ruing class and this tea was rarely consumed outside the Emperor's palace. A monk at a local temple used this tea to cure a stomach ailment of a government official. Hearing of this cure the Ming Emperor became the patron at the temple and all of the tea was presented each year to him as tribute. This practice continued until the Ching Dynasty and it is rarer that its more famous cousin, Da Hong Pao. Note: Our Bai Ji Guan 2007 is greener and picked slightly later than last year due to drought conditions. The leaves grew slower and needed longer to develop its nutrition. You may notice a more robust and richer taste than last year. As the tea ages, you will notice the less toasty flavor and more floral fragrance. Mr. Liu, Tea Master, suggests letting this tea age a few months to fully appreciate its complexity.
