This is Zheng Yan Cha, which means that it is tea that grows inside the WuYi Mountain. This soil in this are is rich with minerals from the erosion of the mountains. This tea is picked between 8am and 10 am in the morning and the Imperial grade is picked with special care choosing the best leaves. Since this tea comes from with a national park, all of the growers are the workers that have traditionally worked these gardens and are contracted with Master Liu, who makes the tea in the traditional way, all by hand. Rou Gui, the name coming from the Chinese herb we call cassia, began its fame during the Qing Dynasty, and is now the most common grown Zheng Yan Cha. The smell gives it its name. Cassia smells a bit like cinnamon. The smell is strongly cassia with a bit of orchid, honey, and with a slight buttery fragrance. The smell is the easy part for the tea maker, while the taste is more difficult. This tea is medium roasted tea, bake over bamboo charcoal for about four hours. The fragrance will last over many infusions, which is one of the tests for quality. The tea should be very clear with a light orange color.
