The large tea leaves used in this loose-leaf shu puer tea give it a very distinct flavor. Although shu puer is processed by ripening very large batches of all sizes of leaves mixed together, the tea is sifted and sorted into leaf size grades from 1 (smallest) to 10 (largest) after it is complete. While small-leaf puer like Gongting (Palace Puer) tend toward richer, more intense and savory flavors, large leaf puer like the grade 8 to 10 leaves used for this Da Ye Shu produce a softer, smoother, cleaner flavor with less earthiness and a pronounced building sweetness. Extra sweetness can be extracted from the leaves by boiling the leaves on the stove for awhile.
Over the years, teas like this can develop a lovely fruity “jujube date” fragrance that is unique to large-leaf shu puer.
