Among China’s many examples of fine pottery, Jingdezhen porcelain has a long history reaching back over 2,000 years. Its white porcelain in this style is said to be “white as jade, bright as a mirror, thin as paper, and loud as a chime.”
This size of gaiwan is ideal for gongfu brewing. Use a large amount of leaf (8 grams or more) and brew for multiple very short infusions to enjoy the way the flavor changes as the leaves gradually open up.
