The tour today was in Anji. Anji Bai Cha is one of the great green teas. Bai cha means white tea in Chinese but this tea is green. This tea was the favorite of the famous Song Dynasty emperor, Song Hui Zhong. This tea is probably the richest in amino acids which gives it it sweetness. This tea is in it’s second day of production and has a yellowish waxy color to the leaf. The leaf will turn to a solid green when the temperature reaches 18 degrees Celsius and the grade of tea will change. I can’t wait to taste it, and I’m very jealous not to be there. The blossoms of the fruit trees in the gardens add to the complexity of the taste.
