Very large young tea buds from Baiyingshan give this tea its poetic name from their very long, curving shape, fuzzy texture, and the pale color. They yield a rich, sweet, and complex brew with an aroma like a bunch of fresh-picked flowers, due in part to their high concentration of sweet-smelling amino acids. The infusion is a bright, light apricot color, and the permeating aroma will accompany you through the last cup.
This is tea exclusively made from young tea buds, which was once a tribute tea made only for the imperial court. Just like high-quality green tea, the buds for this tea are picked in the early spring before the Qing Ming Festival around April 4th.
Making Bai Long Xu
Bai Long Xu is processed similarly to other white teas, however, tea pickers will wait until most of the tea buds are 7-8cm tall. After harvesting, the tea buds are sorted to remove any large leaves and other impurities. The leaves are arranged in a thin layer over bamboo trays or sheets to wither in the shade for a couple days. Withering takes multiple days to ensure that the leaves tucked inside the buds are fully dried. Then, the tea is sorted again to remove any small pieces of leaves and is then ready for sale.
